Black History Month: What's on the menu?

We asked staff and students from the Black community at UAL to share their favourite dishes with us so that we can re-create and serve them in our canteens throughout Black History Month. Food is a core part of any culture and is a great way to learn more about someone's history and background.
The dishes you can try this month:
Efo Riro (Nigerian Spinach Stew) – A savoury and spicy Nigerian stew made with spinach, tomatoes, and peppers, often cooked with assorted meats or fish. (Contains fish)
Brown Stew Chicken – A flavourful Caribbean dish where chicken is slow-cooked in a rich, brown gravy with herbs, spices, and vegetables.
Jerk Sweet Potato and Black Bean Curry – A Caribbean-inspired dish featuring sweet potatoes and black beans simmered in spicy jerk seasoning. (Contains fish)
Jerk Chicken and Plantain – Spicy, smoky jerk-marinated chicken paired with sweet, caramelized fried plantains.
Ackee and Saltfish – Jamaica’s national dish, combining the buttery texture of ackee fruit with salted cod, sautéed with onions, peppers, and tomatoes.
Palaver Sauce and Grilled Plantain – A West African dish made with leafy greens cooked in a flavourful sauce, served alongside sweet, grilled plantains. (Contains fish)
